How to Make Hibiscus Orange Shortbread Cookies
Step 1: Prepare the Hibiscus Powder
Place dried hibiscus flowers in a clean spice grinder. Grind in short bursts until finely powdered.
Sift through a fine-mesh sieve to remove larger fibrous pieces. Start with 2 teaspoons in the cookie dough for a gentle tart flavor, or use 3 teaspoons for a stronger hibiscus taste.
Step 2: Cream Butter and Sugar
Beat softened butter, powdered sugar and brown sugar together for approximately 2 minutes, until light and creamy.
Mix in the vanilla seeds or vanilla extract and freshly grated orange zest.
Step 3: Combine Dry Ingredients
In a separate bowl, whisk together flour, cornstarch, hibiscus powder, cinnamon, ginger powder and salt.
Gradually add the dry ingredients to the butter mixture. Mix on low speed until a soft dough forms. Avoid overmixing.
Step 4: Shape and Chill
Divide the dough into two portions.
Shape each portion into a log approximately 1½ inches wide. Roll the logs in coarse sugar, wrap in parchment paper and refrigerate for at least 1 hour or overnight.
Step 5: Slice the Cookies
Preheat the oven to 325°F (165°C). Line two baking sheets with parchment paper.
Slice the chilled dough into ¼-inch rounds and arrange them approximately 1 inch apart on the baking sheets.
Step 6: Bake
Bake for 14–16 minutes, until the cookie edges are set but still pale.
Avoid overbaking to preserve the delicate texture and hibiscus color.
Step 7: Cool and Decorate
Allow cookies to cool on the baking sheet for 5 minutes before transferring them to a wire rack.
Once completely cool, drizzle with melted white chocolate if desired.
Why Hibiscus Works Beautifully in Shortbread
Hibiscus provides a naturally tart, floral flavor reminiscent of cranberries.
Unlike many traditional cookies, shortbread does not require baking soda. This helps preserve the hibiscus color, which can change when exposed to alkaline ingredients.
The combination of hibiscus, orange and warm spices creates a distinctive cookie that feels especially suited to autumn and holiday baking.
Tips for Better Hibiscus Cookies
-
Sift the ground hibiscus to remove fibrous pieces.
-
Keep the dough chilled for cleaner slices.
-
Use fresh orange zest for a brighter flavor.
-
Avoid adding too much hibiscus powder, as it can create excessive tartness.
-
Remove the cookies before they become golden brown.
