- In a large bowl, mash the cooked black beans with a fork, leaving some texture.
- Stir in the cooked quinoa, breadcrumbs, red onion, chopped cilantro, dried mango, jalapeño (if using), lime juice, cumin, chili powder, salt, and pepper.
- Mix well to combine and form a cohesive mixture. If the mixture seems too wet, add additional breadcrumbs by the tablespoon until it holds its shape when formed into patties.
- Heat a lightly oiled pan or grill over medium heat.
- Form the mixture into 4 equal patties.
- Cook the patties for 3-4 minutes per side, or until golden brown and heated through.
- Serve on hamburger buns with your favorite toppings, such as lettuce, tomato, avocado, salsa, or vegan mayonnaise.
Tips:
- To ensure the patties hold their shape, chill the mixture in the refrigerator for 30 minutes before forming them.
- You can bake the patties instead of frying them. Preheat the oven to 400°F (200°C). Lightly grease a baking sheet and bake the patties for 15-20 minutes per side, or until heated through.
